Today I came
across the “LAST CHANCE!” link to the Shine Supper Club on Yahoo.
Being the
Texas gal and gourmet tailgater that I am, I just had to enter!
I like to
keep it simple and delicious so as to spend my time enjoying the festivities rather
than fussing over the food.
Here are a couple
of my favorite grillin’ recipes…
Portabella
Burgers
1 package
whole grain buns (I prefer Ezekiel)
4 large
portabella mushroom caps
Muenster
cheese
Organic
beefsteak tomatoes
Organic romaine
lettuce
Any other
toppings you would normally put on your burger
Place the
mushrooms ribs-down on the grill and leave for about 20-30 minutes, depending
on the flame. Flip and repeat. Top with cheese (I find that it holds better on
the ribbed side) and pile on the veggies!
Warm Grilled
Pears With Bleu Cheese
3-4 organic
pears
Bleu cheese
Balsamic vinaigretteHoney (optional)
Slice and
core the pears. Place them flesh-down on a low flame and tent them with a piece
of folded foil. Leave for about 10 minutes or until tender. Flip the pears and
fill the core hollows with the bleu cheese. Replace the foil tent and allow
cheese to melt. Remove from grill and drizzle with vinaigrette and honey.
Viola! A simple, unique dessert.
Variation:
ditch the cheese and balsamic. Replace with fresh raspberries and greek yogurt,
which you top the pears with once removed from the grill.
These recipes are entirely customizable. Tweak them to fit your taste and have fun!
